For my swiss roll, I glacaged the surface to make it look glossy and have variation in the taste.

●Dough

3 eggs (large size)

70g Granulated sugar

50g Cake flour

10g cocoa powder

20g milk

Filling

●Whipped cream

200g Double cream

20g Granulated sugar

●50g Cream cheese(room temperature)

*Add sugar to double cream and beat, then add soften cream cheese and beat again.

Separate a little amount of the whipped cream for decorations.

●Orange compote

1 orange

1 tsp sugar

*Take 2 slices of orange with peel for decorations, and peel the rest.

Put the peeled orange in a heat-resistant container and sprinkie sugar on it. Wrap and heat it with a microwave (600W) for 1 min 30 sec, then cool it.

●Glacage(easy amount)

100g milk

70g Granulated sugar

30g cocoa powder

3.5g Gelatin powder

*Put all ingredients except for gelatin in a pot, stir and heat (low,) and when it's thick, remove from heat and add gelatin powder, and mix well.

Directions

①Crack an egg into a bowl.

②Mix it with a hand-mixer.

③Warm it at a double-boiler at 40°C until it is lukewarm.Add sugar.

(when it's lukewarm, remove the bowl from the double-boiler.)

④Beat it quickly with the hand-mixer until it gets thick.

Beat it until the mixture thickly sticks to the mixer and falls like ribbon.

⑤Mix it with the hand-mixer slowly for 30 sec to make the mixture smooth.

⑥Add shifted cake flour cocoa powder. Mix it with a rubber spatula. (like ladling out) Mix it well until it gets glossy.

⑦Add warm milk with the spatula so that it doesn't splash, and mix.

⑧Pour the mixture into a baking sheet lined with baking paper, and make it flat.

Drop the baking sheet to get the air bubbles out.

⑨Bake it for 11〜12 min at 180°C(356 °F)

⑩When it's baked, remove it from the baking sheet quickly and cool it on a cake cooler.

Wrap the top so that it doesn't get dry.

⑪Put the orange compote juice in a separate container. Add western liquor (such as rum or grand manier) if you like.

⑫When the cake is cool, spread ⑪ on the brown side with a brush.

⑬Then spread whipped cream and put the orange compote (without juice) on it.

⑭Roll it and shape it nice, and cool it well in the fridge.

⑮When the swiss roll is cool enough, put it on a net (or something else) and pour the glacage onto it.

Pour the glacage when it's slightly cool.

Put the rest back to the pot and you can use it again by warming.

⑯Cool it in the fridge.

⑰Squeeze whipped cream on top and put orange slices for decorations, then serve!

材料 25cm角天板

●生地

卵(L)3個

砂糖 70g

薄力粉 50g

ココアパウダー 10g

牛乳 20g

●ホイップクリーム

生クリーム 200g

砂糖 20g

●クリームチーズ 50g (室温)

*生クリームは砂糖を加えて立てて、柔らかくしたクリームチーズも加えて立てる。

最後の飾り用の生クリームはこの中から少し取り分けておく。

●オレンジコンポート

オレンジ1個

砂糖小さじ1

*オレンジは飾り用に皮ごと二枚薄くスライスし、残りは皮を剥き、実だけにする。

これを耐熱容器に入れ、上から砂糖をかける。ラップをかけて、電子レンジ600wで1分30秒加熱して

冷ましておく。

●グラサージュ(作りやすい分量)

牛乳 100g

砂糖 70g

ココアパウダー 30g

ゼラチンパウダー 3.5g

*鍋にゼラチン以外の材料を全て入れて、かき混ぜながら、火を通す(弱火)

とろっとしたら、火からおろして、ゼラチンパウダーを加えてよく混ぜる。

作り方

①ボウルに卵を割り入れる。

②ハンドミキサーで混ぜる。

③40℃位の湯煎にかけてひと肌位に温める。(ひと肌に温まったら、湯煎から外す)砂糖を加える。

④ハンドミキサーで白くもったりとするまで立てる。(高速)

生地がもったりと羽にくっついて、落ちた生地が リボン状になるくらいまで立てる。

⑤最後はハンドミキサーの低速で30秒ほどまわして、生地のキメを調える。

⑥ふるった薄力粉とココアを加える。ゴムベラで混ぜる。

下からすくうようにボウルのふちでゴムベラをかえすようにして混ぜると良い。ツヤがでるまで、しっかりと混ぜる。

⑦最後に温めた牛乳をゴムベラで受けるようにして加えて混ぜる。

⑧ベーキングペーパーを敷いた天板に生地を流し、平らにする。

空気を抜くために天板ごと生地を落とす。

⑨180℃に予熱したオーブンで11~12分ほど焼く。

⑩焼けたらすぐに天板から外して、ケーキクーラーの上で冷ます。上には乾燥しないように、ラップなどをかけておく。

⑪オレンジコンポートから出た果汁は別の容器に移して、お好みで洋酒(ラム酒、グランマニエ等)を加えておく。

⑫生地が冷めたら、紙から外して、焼き目がついたほうに、⑪を刷毛で塗る。

⑬ここに、生クリームを塗り、オレンジコンポートの果汁を切ったものを並べる。

⑭巻いて形を調えたら、冷蔵庫でしっかりと冷やす。

⑮ロールケーキがよく冷えたら、ロールケーキを網などの上に乗せて、上からグラサージュをかける。

グラサージュは、粗熱がとれたくらいでかけるとよい。

(皿の上に残ったグラサージュは、また鍋に戻して温めなおして使うことが出来ます)

⑯これを、冷蔵庫で冷やす。

⑰最後に上に飾り用のホイップクリームを絞り、オレンジを飾れば出来上がり!

Boring Beans No More!!! [3 DELICIOUS RECIPES]

[ OPEN FOR RECIPES] You guys asked for it - here are 3 simple but delicious bean recipes for you to try! I make a giant batch of beans every week but change up the seasonings every time, so feel free to mix and match these ingredients and experiment a bit yourself :) Making dried beans is awesome because you don't have all of the extra sodium and preservatives, and it's usually around 3x cheaper too!

My Instant Pot =

* FAQ - You can NOT use a rice cooker or slow cooker for these listed times. You also must use dried beans, they can't be canned

// 1. SPICY SMOKY BEANS

2 cups soaked pinto beans

2 stalks of celery, diced

1 red onion, diced

2 cloves of garlic, minced

1 tbsp smoked paprika

1 tbsp chipotle powder

---

(1) Soak your beans overnight - rinse/clean the dry beans, then place them in a large bowl with 4-6 cups of filtered water and 1 tbsp apple cider vinegar (optional). Cover and leave in a cool place, then drain before you use them

(2) In your Instant Pot, combine the soaked beans with the remaining ingredients

(3) Seal the iPot and set a timer in the “Manual” setting at “High Pressure” for 20 minutes

(4) Let the iPot release pressure for 10 minutes before manually flipping the switch from “Sealing” to “Venting”

(5) Store in a container in your fridge for up to 10 days

// 2. FIESTA BEANS

2 cups soaked black beans

1 red onion, diced

2 cloves garlic, minced

1 tbsp Cumin

½ cup chopped cilantro/coriander stems*

1 small jalapeño**

Juice + zest of one lime

* FUN FACT: Cilantro stems still have the same amount of flavor as the leaf portion, so because the pressure cooker will be cooking them down to be really soft, you can use them instead and save the leaves for other recipes!

** If you do not add the seeds from the jalapeño, the beans will not be as spicy

(1) Soak your beans overnight - rinse/clean the dry beans, then place them in a large bowl with 4-6 cups of filtered water and 1 tbsp apple cider vinegar (optional). Cover and leave in a cool place, then drain before you use them

(2) In your Instant Pot, combine the soaked beans with the remaining ingredients, except for the nutritional yeast

(3) Seal the iPot and set a timer in the “Manual” setting at “High Pressure” for 15 minutes

(4) Let the iPot release pressure for 10 minutes before manually flipping the switch from “Sealing” to “Venting”

(5) Stir in the nutritional yeast. I decided to add this after the beans have cooked because I find it sometimes loses flavor with heat, and it will also help to make the beans thicker!

(6) Store in a container in your fridge for up to 10 days

Chinese street food and Chinese food is so diversified and delicious. I took a high speed train to Leshan, China and I've been eating street food and really spicy Sichuan food. Best Street Food I've tried! The Chinese food is so good in Leshan, Sichuan! I've eaten Asian/Chinese street food in in lots of places, and Street food in China is some of the best I’ve eaten. I’ve tried street food in Shanghai, street food in Beijing, street food in Chengdu, and Street food in Guangzhou, all of which has been amazing, but I have to say that the chinese street food in Leshan has been some of the best!

The street food in Leshan was the best and all so spicy and flavourful. The Chinese restaurant food was also very nice! I had some amazing blade sheared noodles in the main part of town, which had a huge variety of street food to try!

Here are the street food locations for the Chinese street food and Chinese restaurants in Leshan that I tried:

10 Creative Egg Recipes

Egg White Omelette with Plus Yolk Treat

- Separate egg yolks. In an oiled pan fry egg whites, once set add yolks on top, fold and enjoy!

Egg Noodles

-Scramble eggs. In an oiled pan over medium-low heat coat bottom with scrambled eggs. Cover to steam. Once set, roll up egg and cut into noodles. Toss in some tomato sauce for a glorious shakshuka style breakfast pasta!

Jamie Oliver Inspired Egg Omelette

- Whisk eggs until fluffy, frothy, and light. Heat oil on a nonstick pan and pour eggs. Once the bottom sets fold over. The top may look uncooked but since it's so airy and light it will cook fast. Garnish with some green onions.

Deep Fried Poached Eggs

- In a deep pot heat oil. Once it's hot crack an egg into the oil, be careful it will splash! Cook for about 30 seconds. Remove and enjoy!

Egg on Egg Sandwich

- Separate the yolk from 2 eggs. Beat egg whites with a whisk until still peaks form. On a parchment lined cookie sheet scoop egg whites into a bun shape. Bake at 350 until golden. In a pan fry an egg and add remaining 2 yolks. Season with salt and pepper. Put fried egg between baked egg white buns. Enjoy!

Steamed Eggs

(Ok..ok so messed it up in the video but this recipe works and it's silky and glorious!!)

- In a bowl beat 3 eggs. Add 1 cup of water, and 2 teaspoons of salt, and beat again. Pour into a ramekin, or heat safe bowl. In a pot enough water to come up halfway on ramekin. Bring to a boil. Once boiled lower heat, and add ramekins. Cover and let steam for 8-12 minutes. Remove, it will be hot! Garnish with green onion. For even more flavor you could use vegetable or chicken broth in place of water and add a splash of sesame oil! Mmm...

Marbled Egg

- In a hot pan with oil crack egg and break yolk. Swirl to create a marbled look. Let it still, bottom will crisp up. Once top sets it's done. Add some Sriracha for a yummy kick!

Crissomelette

- Beat 6 eggs. Butter a hot pan, pour some egg mixture, let it set, and fold in half. On empty side of pan butter again, pour more egg, let it set, and fold onto other side. Repeat until egg mix is gone. Buttery layers of egg!

Double Broiler Scrambled Eggs

- Heat water in a pan. Place a bowl on top with a pat of butter. Scramble 2 eggs. Once butter is melted add eggs and slowly mix and fold. After about 10 minutes you will have the most tender, delicate eggerts! Enjoy!

Caramel Apples - You Suck at Cooking (episode 50)

Snapchat: @yousuckatcookin some apples that have a sour taste.

Pick some caramels (aka squaramels) that have a sweet taste.

Put sticks into the apples.

Put caramels into a bowl with a couple teaspoons of milk or cream or water (I put in around 43 caramels).

Put apples in the fridge overnight or the freezer for a little while beforehand.

Put bowl into microwave and melt them (2 minutes on half power...stir every now and then).

Roll the apples and put them back in the fridge or freezer so the caramel doesn't drop down. For a few minutes.

Melt chocolate in the microwave and splatter that all over the damn place (and partly on the apple).

Enjoy and share with friends, or hoard by yourself in your Blanket Fort of Justice.
